Northern Ontario farm grows ‘diabetic friendly’ potatoes

Pike Lake Farms in Sheguiandah, Ont. is growing a variety of potato developed by Montana State University to be “diabetic friendly” when compared to other potato varieties.
This is the first year Pike Lake Farms has grown the Huckleberry Gold variety and there is not a lot of acreage in cultivation across North America. The Huckleberry Gold potato variety has a low glycemic index and deep purple skin, but with yellow-flesh on the inside.
